These are more or less the steps I follow to add unsupported NICs. I've also found that Windows Server doesn't have a problem with USB NICs. I have a bunch of those sitting around that are good for 1GbE so they're not a bad option, either.

There are definitely ways to get an inexpensive and valid Windows Server license and I really don't care if buying one that way is hurting Microsoft somehow.
